  1. clean and dry shad – lay skin side down in baking dish and coat both sides with olive oil
  2. sprinkle thyme, bay leaves, lemon juice, salt & pepper over shad – let sit for an hour
  3. put baking dish under preheated broiler for 3-5 minutes, flip fish, cook another 3-5 minutes
  4. remove from broiler, flip fish back onto skin – check thicker parts of shad – you may want to broil for another 3-5 minutes depending on how you like fish (shad is pretty oily, so you can get away with cooking a little more)
  5. portion and serve immediately – top with whatever you like… cilantro puree, anchovy cream sauce… whatever
