  1. melt butter in a skillet over medium heat and add mushrooms,leek,salt, pepper if you want – stir occasionally – this should be about 15 minutes
  2. add sherry & thyme – when liquid has reduced and thickened add salt & pepper – remove from heat

  1. heat oven to 375F
  2. whisk eggs until frothy – whisk in milk until combined – whisk in flour
  3. pour mixture onto mushrooms, sprinkle top with gruyere
  4. bake in oven for 30-40 minutes, or until surface is golden and the eggs have set
  5. serve warm or room temperature
