anchovy, zucchini, shrimp & cherry tomato sauce

  1. saute anchovies, garlic & zucchini in a large skillet over medium heat
  2. when zucchini has softened (and hopefully has a bit of color) add tomatoes
  3. when tomatoes look cooked (start popping) add some oregano & basil, then the shrimp – saute until shrimp looked cooked
  4. assuming you’ve got some pasta ready (like 1/2 lb), add the pasta to the sauce stir and serve – add some black pepper, grated parmesan, and/or lemon zest & lemon juice as needed
